These kolachie cookies use a cottage cheese pastry that is somehow both a bit more dense and yet flakier than you might imagine, creating a wonderful balance of rich and light. The pastry dough is just sweet enough to hold its own while allowing each filling to take center stage and it all works together without overdoing it.

Sticking to our core principle of "homebaked," we select real ingredients that our Bubba would have recognized. Each of the fillings is made from scratch starting with whole fruits, nuts, or seeds. Even though it is harder for us, we avoid industrial quantities of commercially prepared fillings - and we think the results are worth it. The true fruit and nut flavors are neither masked behind loads of extra sugar (or fake sweeteners), nor tainted by other food-sciencey additives.

These kolachies are not cloying, candy-sweet confections. They have a hearty, wholesome kind of sweetness you just don't find in many other things these days (except maybe Bubba Rolls!).
