These kolachie cookies use a cottage cheese pastry that is somehow both a bit more dense and yet flakier than you might imagine, creating a wonderful balance of rich and light. The pastry dough is just sweet enough to hold its own while allowing each filling to take center stage and it all works together without overdoing it. Sticking to our core principle of "homebaked," we select real ingredients that our Bubba would have recognized. Each of the fillings is made from scratch starting with whole fruits, nuts, or seeds. Even though it is harder for us, we avoid industrial quantities of commercially prepared fillings - and we think the results are worth it. The true fruit and nut flavors are neither masked behind loads of extra sugar (or fake sweeteners), nor tainted by other food-sciencey additives. These kolachies are not cloying, candy-sweet confections. They have a hearty, wholesome kind of sweetness you just don't find in many other things these days (except maybe Bubba Rolls!). We had all but given up hope that we could achieve results similar enough to hers for us to enjoy these filled cookies. One conversation with an aunt changed everything: not only had Bubba given her a copy of the recipe, but she still had it. Even more amazingly, we realized (upon receiving a photocopy) - it was the original, in Bubba's handwriting! March 28, 2024 Reviewer: Barbara Nelson from Royersford, PA United States   I am sorry to say that I was not a fan of the cookies the filling was very good but the cookie itself was not ! The dough is very heavy and almost doesn’t taste like it is done cooking. It is not light or flaky or sweet which an authentic kolachie cookie is a light flaky crust not heavy it seems you used the same dough as you use in your rolls and you shouldn’t do that it to me was not good . I hate to give a bad review but you asked me to respond and I am being honest . Sorry the filling was perfect ! Was this review helpful to you?

Walnut and Apricot kohlachie April 14, 2022 Reviewer: John Wolfe from Abingdon, MD United States   Recently purchased walnut and apricot kolachie cookies. The apricot are excellent. Plenty of filling and flavorful. The walnut filled, not so much. They contain some sort of filling that may or may not have many walnuts in them. Not happy with them at all. Could be sweeter April 8, 2022 Reviewer: Jeanne Sowa from Chicago, IL United States   I liked the cookies, but thought they could be a bit sweeter. I dusted them with powdered sugar, but still not sweet as I remember my grandmother's. They are good in the morning with coffee, but not necessarily as a dessert. The filling is generous.
