We work hard to make nut rolls that taste like the ones our Bubba made!
Our rich, creamy walnut filling is made from scratch for each bake. To ensure we start with the best walnuts, we deal with one of the oldest family-owned walnut producers in the industry. We get our freshly shelled, California-grown English walnuts shipped directly to us so we know they are fresh, not old stock from some warehouse. Similar to ground coffee, ground walnuts also lose their freshness quickly, so we grind the walnuts when they are being made into filling. Like Bubba's, our filling uses so many walnuts that we ultimately put
more walnuts in each roll than any other ingredient! That is only possible because, unlike most every other commercial roll we've tried (and some homemade ones!), each and every roll is made with more filling than dough.
Speaking of dough, just as you'd expect we have to wake up early to start making it. All of our dough is made with a special-milled
unbleached, unbromated flour. We use fresh, liquid milk (not powder!) and local eggs (not canned, cartoned, or frozen ones). We also use Trans-fat free, non-hydrogenated shortening and butter blend margarine. Additionaly, we use only pure cane sugar - no corn syrup or beet sugar. Of course, our suppliers for these items are also family-owned businesses! (Are you seeing a trend here?)
From start to finish, there are no less than 18 different hands-on steps (depending how you count, you could say as many as 26!) to get a baked roll out our door to you. You know what they say: nothing good comes easy!
